2. Processing

This focal area aims at identifying and testing the best available technologies (both established and new) for processing (e.g. drying, milling, extrusion) feeding substrates and insect biomass. Food safety and identification of critical control points for safe mealworm production will be assessed along with the risk of insect products made on `grey zone’ by-products.
